Our first Bourbon-aged release has been created from a mixed mash bill of malted barley, unmalted barley and oats. During its maturation period, this liquid spent time in multiple casks, all of them white oak: 30L Makers Mark, 200L Heaven Hill barrel, and 125L Heaven Hill, freshly shaved and charred. Once decanted, the whisky has been cut back to 52% ABV to achieve a delicate balance of each of its unique influences.
American Oak ex-Bourbon casks work particularly well with our mixed mash spirit. The vanilla tannins and sweet fruity flavours from these casks make a great contrast to the nutty spices and glossy oils of our new make.
